ADMIRAL HOTEL MANILA - MGALLERY COLLECTIONS proudly launched The Admiral’s Travels: Taste of India, in collaboration with Sofitel Mumbai BKC. The culinary journey unveiled a vibrant spread of Indian heritage and flavors, led by Master Chef Waris Qureshi and Chef Rajesh Khanna, who brought their artistry from Sofitel Mumbai to Manila Bay. Held at Admiral Club Manila Bay, the launch introduced guests to a celebration of India’s culinary traditions — a feast of spices, aromas, and textures that showcased the richness of its gastronomic identity.


 

A TASTE OF INDIA
The menu unfolded like chapters in a flavorful story. Guests savored Lucknowi Murgh Pulao, tender chicken morsels layered with saffron rice and mixed spices, and Subz Dum Biryani, where seasonal vegetables simmered in yogurt and Indian aromatics created a symphony of flavors. Bold and hearty mains followed, from the garlic-kissed Burhani Gosht (lamb cooked with onion and tomato gravy) to the comforting Subz Miloni, a spinach-based vegetable medley. Favorites included the smoky Paneer Tikka Masala, rich Lasooni Dal Tadka, and the iconic Butter Chicken, each reflecting the balance of tradition and finesse. For seafood lovers, the fiery Prawn Pepper Fry and the indulgent Kashmiri Lamb Chop, marinated in yogurt and black pepper, offered irresistible depth.


 
Another highlight was the aromatic Murgh Massalam, a spiced whole chicken in creamy saffron gravy. No Indian feast is complete without accompaniments — guests enjoyed Cucumber Raita, Dhaniya Pudine ki Chutney, and classic mango chutney that perfectly tied each dish together.

Beetroot Apple Halwa


The journey concluded on a sweet note with Beetroot Apple Halwa, a pudding of earthy sweetness elevated with fruit, and Shahi Tukda, golden fried bread soaked in saffron syrup layered with rich reduced milk. “Taste of India is more than just a menu; it is a celebration of culture and connection,” shared the chefs, as they emphasized the timeless role of food in bridging traditions and communities. The spread is available daily at Admiral Club Manila Bay along with the other buffet spread until October 31, 2025, giving diners the chance to embark on their own flavorful journey through India right at the heart of Manila. With every dish, Admiral Hotel Manila reaffirms its commitment to cultural and culinary discovery — honoring bold flavors while welcoming guests with a new experiences by the bay.

CHEF WARIS QURESHI – Indian Master Chef at Jyran, Sofitel Mumbai BKC
Sofitel Mumbai BKC proudly introduces Waris Hasan Qureshi as the Indian Master Chef at its award-winning signature restaurant, Jyran. Known for its authentic cuisine inspired by the Northwest Indian Frontier Province, Jyran is now helmed by Chef Qureshi, who brings his mastery in Awadhi, Hyderabadi, and Kashmiri cuisines to elevate the restaurant’s offerings.

Chef Qureshi's culinary journey is deeply rooted in his family heritage. Born and raised in Lucknow, he was inspired by the stories of his great-grandfather, Mohammed Yusuf Qureshi, who served as the head chef to Nawab Wajid Ali Shah in the 18th century. His interest in cooking was sparked at a young age by listening to tales of the lavish feasts his great-grandfather prepared for the Nawabs. Chef Qureshi began assisting his father in the family’s catering business, furthering the legacy that has been passed down through generations.

Chef Qureshi began his professional career in Mumbai, working with renowned restaurants and luxury residences before transitioning to the hotel industry. His culinary journey led him to several prestigious properties, where he specialized in creating unique, traditional Indian menus. His dedication and talent earned him significant roles at leading hotels, where he crafted specialty dishes and curated food festivals showcasing lesser-known regional cuisines.

Chef Qureshi's expertise lies in developing authentic, innovative menus that celebrate the richness of Indian cuisine. His signature dishes, including Awadhi Ghosht Dum Biryani, Shahi Ghosht ki Gilawat, Kakori Kebabs, and Nalli Nihari, are a testament to his culinary prowess and deep knowledge of traditional cooking techniques. His passion for reviving heritage recipes and presenting them with modern flair has made him a formidable presence in the culinary world. Outside the kitchen, Chef Qureshi enjoys spending time with family and friends, playing cricket, traveling, swimming, and experimenting with new recipes. His dynamic personality and passion for cuisine make him a cherished addition to the Sofitel family, where he continues to uphold and innovate on the restaurant's distinguished culinary legacy.
